Technological watch is a Science of Information and Communication, which allows to keep regularly informed of technological developments (as well as technological innovations) which can constitute either a threat or a market opportunity for an organization.

 

Many industrial sectors use this science to detect technological innovations; the coffee sector is of course no exception.

 

The project carried out by a French engineering school is an example of this.

 

The aim of this innovative project was to produce the prototype of a coffee machine, capable of automatically serving coffee to a customer, provided that the latter smiled at it!

 

The detection of the consumer’s smile was carried out by facial recognition software, equipped with artificial intelligence (AI).

 

 

The software being programmed from OpenCV (acronym for Open Computer Vision; computer vision), an image processing computer library, equipped with learning algorithms allowing the detection of faces, and distributed under a free license (otherwise says, Open source).

 

Furthermore, another original feature has been added to this coffee machine; the automatic sending of the photo of the smiling customer (in other words, his selfie), on the social network Twitter, once the coffee is served.

 

These French researchers have therefore designed a coffee machine equipped with computer vision (that is to say, based on pattern recognition) but also a coffee machine connected to a social network.

 

A technological watch makes it possible to find another innovative project in the field of coffee; the one developed by a team of Brazilian researchers.

 

The originality of their project lies in the fact that they have created a system capable of sorting coffee beans according to their color, in other words, capable of classifying coffee beans according to their degree of maturity.

 

Perhaps you already know this; coffee cherries (the fruit of the coffee bush from which coffee beans are extracted) mature when these are red in color.

 

The coffee cherries are then harvested, most of the time by hand, during an operation called picking.

 

Then coffee beans (also called coffee beans) are extracted from these coffee cherries.

 

 

At this stage, the coffee beans generally have a more or less nuanced green color, depending on their actual degree of maturity, in other words on the quality of the harvest.

 

The greener the coffee bean, the riper the coffee bean and therefore the better its aroma will be after roasting (that is, after exposure to heat).

 

However , the degree of maturity is not the only element to take into consideration when selecting good coffee beans ; their sieve (in other words, their size) as well as their appearance are also important factors.

 

Unfortunately, given the volume of grain to be processed, the sorting process is often a tedious operation for growers. .

 

This is why the use of artificial intelligence (computer vision, in particular) is an original and innovative way of making the sorting operation less restrictive for growers, and therefore for farms in general.

 

To do this, the system relies on pattern recognition (ie, computer vision).

 

First, Artificial Intelligence detects the shades of green of each coffee bean, according to the RGB (Red Green Blue) color model.

 

The computer vision system then switches from RGB modeling to a color space called L*a*b* CIE 1976 or CIELAB.

 

 

The coffee beans are then sorted and classified according to their degree of maturity, thanks to three neural networks, according to the Naive Bayesian Classification.

 

Knowing that a Bayesian classifier is a family of algorithms that group together samples having similar probabilities.

 

With this method, the coffee beans are sorted with an accuracy close to 100% and the coffee obtained, after roasting, is only of better quality.

Thus, to make your own icing sugar from whole cane sugar, you can, for example, combine the following ingredients and kitchen utensils; whole cane sugar (enough to fill an 11 oz coffee mug), a tablespoon of cornstarch, a food processor.

 

 

Then, the ingredients are poured and mixed in the tank of the mixer, for about two minutes.

First, place 15 g of organic margarine at the bottom of your coffee mug and heat your mug in the microwave for about fifteen seconds.

 

In a second step, break the egg, pour the egg yolk and the egg white into the coffee mug then stir everything for about ten seconds.

 

Thirdly, add the flour, vegetable cream, cocoa powder and a few drops of vanilla to the mixture and stir the mixture again.

 

If the dough becomes too thick, add a few spoonfuls of vegetable milk to soften it.

 

 

In a fourth step, insert a few pieces of chocolate inside the dough obtained, using a knife then equalize this dough.
