You might be wondering what a café con Leche is ?

“Con Leche” is an expression of Spanish origin which literally means; “with milk” .

A Con Leche coffee is a Spanish coffee with milk, relatively simple to make since the barista mixes in a coffee mug a dose of Espresso, with a dose of milk heated to high temperature (in other words, pasteurized), in order to eliminate any microbes.

Café con Leche can be served in a glass, it is then called “Café con Leche en vaso”.

However, when served for breakfast, it is instead called “Café con Leche de Desayuno”.

To make a Spanish Café con Leche, the barista needs a coffee maker or an Espresso coffee machine, 9 g of Arabica or Robusta coffee beans, a teaspoon of brown sugar, a mug coffee of 11 oz or 15 oz capacity and one ounce of hot whole milk (the equivalent of 30 ml of milk).

First, the barista prepares a black coffee.

The easiest way is to use freeze-dried coffee, in other words water-soluble coffee.

Being dried and ground, this type of coffee powder has the advantage of keeping for a long time under normal conditions of use, but also of taking up little space in a storage unit.

The paper filter has the reputation of filtering coffee grounds a little better than a permanent filter, but the quality of the latter is constantly improving.

  • a tank (often made of glass) which sometimes acts as a coffee jug (or even a thermos when the tank is insulated), possibly equipped with a water level indicator.

This glass jug is sometimes equipped with an anti-drip system allowing it to be removed safely and at any time.

With this type of coffee maker, the barista begins by grinding the coffee beans, using an electric or manual bean grinder.

Indeed, if a coffee grind is too fine, it will tend to be too compact to allow water to pass easily through the filter.

  • in a second step, the barista pours 50 ml of water, for 30 seconds, on the ground coffee, in order to degas it .

The degassing operation allows the carbon dioxide contained in the ground coffee to escape.

  • in a third step, the barista adds 200 ml of water to the filter, making spiral movements
  • in a fourth step, he adds 250 ml of water in the filter holder, also by making spiral movements.

The total of these water pours should not exceed 500 ml or take longer than 3 minutes.

  • in a fifth and final step, the barista lets the coffee infuse for about 4 minutes, then collects the filter coffee, in order to pour it into a coffee mug.

Whether the filter coffee maker is manual or electric, the extraction time of the drink obtained from the infusion and filtration of the coffee grounds is relatively long.

More precisely, this extraction time is in any case longer than that of a classic Espresso coffee.

This is why the filter coffee obtained with this type of manual coffee maker is also called “Slow Coffee”.
